“My Book of Niçoise Recipes”, published for the 10th anniversary of the Chef – and more specifically the direct management takeover of school catering by the City of Nice – highlights the main traditional dishes of Niçoise gastronomy. Children can try making recipes at home like daube, pissaladière, fritters, stuffed vegetables, or Swiss chard pie, either on their own or with their parents…

In 2008, newly elected mayor of Nice, Christian Estrosi, launched an ambitious project for the well-being, health, and future of young Niçoise: reclaiming direct management of school catering, enhancing food quality, and creating a new central kitchen to offer high-end, balanced meals made from the best food products to children in nurseries and schools.

Today, the promise has been fulfilled: nearly 25,000 guests enjoy delicious dishes crafted daily by Chef Ratatouille! Organic, labeled, homemade products, PDO, AOC, vegetarian dishes, plastic-free cooking…: the quality and food safety are ensured. The 750 school catering and nursery staff are dedicated to the well-being and health of young children.
