The Nice Carnival 2025 highlights local flavors with the Carnival Ganses Competition. Pastry enthusiasts will be invited to revisit this Nice specialty.
The ganses of Nice are small pastries from the family of fritters, whose close cousins are the “merveilles” from the Southwest of France. It is originally a culinary specialty of the County of Nice. The ganses and the chard pie are the two Nice culinary specialties unique to the Carnival.
The competition is free and reserved for non-professionals. It will take place on Wednesday, February 19 starting at 2 PM at the Maison de l’environnement in Nice. Participants must prepare their ganses and present them on a platter that aligns with the carnival theme: “the Oceans”. A jury composed of bakers and pastry chefs will evaluate the creations based on their presentation and taste.
Registrations are open until Friday, February 14, 2025, inclusive. To participate, simply send your name, surname, contact details (email address, phone number), as well as the recipe of your ganses to com.cfa@nicecotedazur.org. An initial selection will be made from the recipes sent.
On the day of the competition, participants will unveil their creations in front of the jury. The winner will receive a prize, as will all the participants.
This competition is part of the effort to promote local gastronomy while celebrating the spirit of the Nice Carnival.
